Nov 16Table Talk: Spaghetti Squash

Are y’all familiar with spaghetti squash? I had eaten it a few times when I was younger, but had never made it myself. That all changed recently when I saw a tempting pile at the grocery store and decided it would be a healthy, filling dish to try preparing. And friends, I was not disappointed. It’s super easy and has a delicious, buttery flavor. Enjoy.

Spaghetti Squash
1- Preheat oven to 350°.

2-  Cut spaghetti squash in half.

3- Place squash flesh side down on baking sheet sprayed with olive oil.

4- Bake for 1 hour.

5- When done cooking, scoop out seeds and throw away.

6- Use fork to scrape out inside flesh until you reach the outside shell.

7- Serve in place of traditional noodles.

*We topped the spaghetti squash with sauteed mixed veggies cooked with garlic, olive oil and crushed red pepper then topped then drizzled with additional olive oil and crushed red pepper. Yum!*

      We’re having it tonight in place of pasta spaghetti with our spaghetti sauce. I cook it in the microwave. Yummy :)
